HOW DO WE SMOKE THEM? I started smoking our native pecans over mesquite wood in a smoker, but had problems with consistency. Customers would say it was too much one time, too little another. When I found a Texas company who smolders mesquite wood under stainless hoods, catching the water vapor and smoke, and filters out tars and resins, I tried it. They sell it bottled in the store, but I buy the 100% pure condensate direct from them with no additives. So it is exactly what would hit the pecans in the smoker, minus the possibly hazardous tars. Perfect, consistent flavor but healthier than straight smoke. I spoke on the phone with Sally Fallon Morell of the Weston Price Foundation. She said that while they generally disapprove of liquid smokes because of the additives typically in the grocery store bottles, she felt our process sounded great and said I could mention that on our website.
