After the first edition of Simple Mason Jar Yogurt was published I began receiving requests for a dairy-free yogurt recipe. I wanted to help, but yogurt making with milk alternatives presented quite a few challenges and drawbacks.
I discovered in my initial research that everyone else seemed to settle for dairy-free yogurt recipes that I thought were unacceptable. Too thin. Too many steps. Too high in calories or not rich enough to be satisfying. Not neutral enough in taste that you could eat it plain, with fruit or get crazy and make tzatziki.
The ingredient lists for most commercial dairy-free yogurts are lengthier and more unpronounceable than traditional yogurt. Even worse for my dairy-free and vegan friends is price and availability - especially for the better brands.
These were problems I was eager to solve. With a combination of experience, trial and error and a bit of outside-the-box thinking, I created a recipe that fits the bill.
My dairy-free recipe is even easier than the Simple Mason Jar Yogurt dairy recipe. It makes yogurt that's thicker and richer than most commercial vegan yogurts - with no added thickeners, and it's tasty enough to eat plain. I love the ease of my original method, but when I got an Instant Pot one of the first things I tried was the yogurt recipe. It wasn't as creamy as my regular Mason Jar Yogurt, and had a "cooked" flavor.
