The proofing basket can be used with the linen liner, to get a smooth bread surface after baked, or without the liner, to have a nice striped rougher bread crust.  

Using the wrong tool to scrore the dough  will harm the proofing process. A regular knife will just cut the dough roughly, a flimsy plastic lame will require pressure, smashing the dough. Our metal bread lame dough scoring tool will just slash the surface gently and precisely.
