What is Virgin Wheat?

Virgin Wheat aka Einkorn, is the original and pure form of wheat that dates back thousands of years.

Virgin Wheat differs from modern wheat in many ways. Virgin Wheat has never been hybridized and genetically modified.  Its genetic structure is completely different from today's wheat. It consists of two sets of 7 chromosomeswhere Modern Wheat has 42 Chromosomes.  Its gluten structure is different than modern wheat, too. There are very recent studies that point to a better tolerability of einkorn for Non-celiac gluten sensitivity patients, because of very low total ATI protein contents.
