One locally grown acorn squash. Acorn Squash is a winter squash with deep green or orange skin, and sweet yellow-orange flesh. We love to halve and roast it in the oven with a little bit of butter and brown sugar. Acorn squash is also excellent stuffed with quinoa, diced vegetables and pine nuts. It's a great source of potassium and vitamin C.
