Bolita Beans : The Bolita bean is a little sweeter than the pinto bean. It has a tendency to absorb the flavor of added condiments and cooks faster than the Pinto bean. Bolita beans are very good in chili, an excellent soup bean, and a tasty baking bean. Bolita Beans are Old Mexican Beans that date back approximately 7,000 years. Seeds of the Bolitas were found in the Cliff Dwellings of the Mesa Verde National Park, located in Southwestern Colorado. The Spanish Explorers that came from Mexico are believed to have brought Bolita beans with them when they came up the Rio Grande Valley. Today about the only people that are familiar with the Bolita beans are the Spanish descendants that were raised along the Rio Grande River in New Mexico and the San Louis Valley of Colorado.
