After being rushed to our smokehouse, within days of being caught, only the premium salmon are selected for smoking. Once chosen, the salmon are hand filleted and then marinade in a brine, full of rich seasonings. The salmon is then smoked over alder wood fires. Finally, each fillet is inspected before it is sealed
