The cru comes from specific production areas and has a striking personality, just as grapes have a terroir and a defined taste and flavor. The I CRU Napolitains are the immediate and wild expression of the cacao. The raw material arrives untouched. The aroma has an overpowering strength and sometimes the acidity can be felt more and ends with a pleasant sensation of freshness and cleanliness. Those 36 Napolitains (six varietal flavors) will make you travel to six rich horizons:
Ecuador Fondente Extra 70% Extra Dark Chocolate. Aromas: Toasted cacao, rare aroma of forest freshness, wood bark and brambles, green tea, strawberry, honey, exotic fruits (avocado, papaya, mango), ground pistachio.
Venezuela & Madagascar provide a "trinitarian" aroma which genetically has 85% of "criollo", the antique cacao from the Maya.
Trinidad, Jamaica & Grenada provide a high level of "trinitarian".
Trinidad aromas: Aroma of cocoa powder and Cuban Partagas cigar, freshly removed tomato stalk, rain-drenched rail tracks and sleepers. A persistent chocolate, imposing but never aggressive.
Jamaica aromas: Raw cacao, fresh dates, Mediterranean fruits, dried figs, carob, green olive pulp, freshly cut poplar, apricot jam and ginger. Persistent on the palate, rich yet not bitter. A fascinating chocolate.
Grenada aroma: Very delicately toasted cacao, fresh tropical tree bark, eucalyptus, warm and balanced aroma of exotic spices, slightly balsamic. A balanced chocolate, a chocolate with class.
