If you are anything like me, you make a point to prepare pancakes at least once a week. I typically make pancakes on a weekend day. My favorite time is when all my family members are still asleep and they wake up to the smell of the pancakes cooking, and sometimes bacon as well, I have to admit. Cooking pancakes is almost the same as saying â€œI love youâ€.

When my children were little, I used to make different shapes of pancakes, put smiley faces on them, or even decorate them with icing and other sugary toppings. As we are all getting older, I am trying to come up with healthier ways to serve pancakes, including perhaps chia seeds, flaxseeds or even sometimes other type of flours then the traditional all-purpose white flour. Itâ€™s also always a good idea to incorporate whatever fruits are in season and make it a special treat.
