Brillat Savarin Non-Affiné is a soft, uncooked, unpressed, triple crème, cow's milk cheese from France. It was named after the renowned XVIII century French food writter Jean Brillat-Savarin. It has a luscious, dense, and creamy texture.
The taste is buttery, salty, creamy and accompanied by notes of mushrooms, nuts, and truffles. The rind is white and bloomy as the cheese grows a velvety, white crust with time. This Brillat Savarin is "non-affiné", meaning "unripened", unlike its "affiné" counterpart that is aged.
