Package directions: Rinse and sort Camellia red kidney beans. In a large saucepan, add beans with 8 to 10 cups water and begin cooking on low heat. If desired, in separate skillets, brown sausage or your favorite meat and saute' onion, garlic, parsley and/or celery. Add cooked meat and/or vegetables to beans. Add salt, pepper and cajun seasonings to taste. Cover and simmer for 1 to 1.5 hours (or longer) until desired tenderness is achieved. For a creamier consistency, when beans are soft, crush some of the beans against the side of the pot with a large spoon. Add water while cooking if necessary. Serves 6 to 8.
