No artificial ingredients. A multipurpose liquid seasoning which enhances the natural food flavors and eliminates the raw fragrance of meat and fish. Imparts wonderful umami flavors.
Naturally sweet from the fermentation of rice using koji; a complex carbohydrate grain sugar, or maltose, pairs well with soy sauce (shoyu) for many marinades, sauces, dressings, and soups.
Mirin's alcohol content, about ten percent, quickly evaporates when cooked with food or may be removed by heating it to the boiling point, and allowed to cool before adding to uncooked foods if desired.
