Blue Stilton English Cheese: King Of Cheeses, close textured un-pressed cheese with a pale ivory paste, grading to amber at the edges and marbled with white powdery patches. Full, fruity, deep, intense, sharp, and buttery flavor. Its made from whole cow's milk, ripened 4 to 6 months,during which time it is skewered numerous times to encourage the growth of Penicillm roqueforti, creating a pale yellow interior with green-blue veins, the texture is rich and creamy 45% fat but still slightly crumbly in texture.
