After roasting coffee for more than 30 years I am surprised how French Roast is often just plain burnt. To make a great French Roast you need two things: very hard beans, beans that can take the long hot roasting process without falling apart, and you need to know how to control your roaster. As you roast coffee beans they get darker and darker and they begin to give off heat and they no longer absorb heat. If you let the coffee get going too fast in the roaster, which is easy to do, then you get very dark coffee, but it will taste burnt. The secret is to control the roast, stretch the roast, make sure the beans never get a chance to "take-off" and roast themselves. With proper French Roast you get deep and dark but without burnt flavors. You want dark toast, not burnt toast! It is easy to get burnt toast...dark toast, deep toast, not that's not so easy. With the increased amount of coffee in our cups, you can go ahead and brew a larger cup of enjoyment with no additional cost.
