Unique to the tea gardens of Fujian Province, white tea has distinctive downy white hairs on the leaves. This tea is minimally processed: leaves are allowed to wither naturally in cool conditions to remove moisture. The leaves are steamed briefly but are neither rolled (as for green teas) nor allowed to oxidize (as for black teas).
