Garlic peels tend to cling to the clove. Many cooks deal with this by smashing down on the clove with the flat side of a chef's knife blade, which separates the skin from the garlic. They then pick the peel away with their fingers. While this removes the skin, it has several problems:
1. Knife blades are not meant to take this abuse; it can shorten their lives.
2.The cloves are crushed as part of the process, releasing juices that leave garlic odors on anything they touch. Additionally, garlic has a different flavor in a dish depending on how finely its chopped-- a whole clove produces a more mellow flavor than one that's been smashed.
