The Global Knives 30th Anniversary 3 Piece Set includes the 8" Hollow Ground Cook's Knife (G-77); the 5" Cook's Knife (GS-89); and the 3.5" Paring Knife (GS-38). All three are essential pieces and make a fantastic and versatile base for a complete set. Global G and GS series blades are made from a proprietary CROMOVA 18 Molybdenum/vanadium stainless steel alloy. The knives are ice-tempered and hardened to Rockwell C56-58 degrees. Global blades hold a razor sharp edge longer than any other steel and resists rust, stains and corrosion. The thin blades are incredibly sharp and the favorites of professional cooks and chefs the world over.
