This Japanese cypress sushi mold is used to make oshizushi, or pressed sushi. Oshizushi, also known as hakozushi (box sushi), is a form of sushi in which the sushi rice and topping are placed into a mold and pressed, resulting in a rectangular, box-like shape. Oshizushi originated in the Kansai region of southern-central Japan, and is a specialty of Osaka.
