BROUGHT TO YOU FROM SPAIN: Ortiz anchovies are caught in the Cantabrian Sea, off the northern coast of Spain. To ensure you get anchovies of the highest quality, the fish are wild-caught during the natural spring fishing season using sustainable fishing techniques.
PREPARED TO PERFECTION: Our anchovies are classified by size, their heads are removed by hand and they are left to mature in barrels with salt and press for a minimum of 6 months. Once at their best, they are individually hand fileted, cleaned from salt and packed in olive oil. This careful, traditional preparation process brings you premium anchovies with a compact flesh and rich flavor.
