This Polenta is coarse, in the Italian-Style. It is a delicious comfort food you will devour! Polenta is made from light to dark yellow corn that has been coarsely ground. When cooked, it has a soft, creamy texture with a delicious corn flavor. - To prepare: Boil 4 cups of water or stock. Add 1 cup of polenta very gradually, whisking constantly. Bring to a boil, then reduce heat to a simmer for about 40 minutes, or until ver y thick, stirring every 10 minutes. Season and serve as desired!
