The curds for this cheese are put into baskets & aged for 30 days giving the white outside crust a basket imprint. The flavor of this young sheep's milk cheese is bright, fresh, milky and slightly salty. Enhanced with green olives, arugula and red pepper. Excellent antipasto cheese.
