Saba, or cooked grape must, is the precursor to balsamic vinegar. The difference between the two is that unlike balsamic vinegar, saba has not been aged in barrels for years.
The taste is acidic yet very sweet, with a thick, syrupy texture. Drizzle it on fruit, dessert, or gourmet cheese for a decadent bite.
Sanniti Saba Cooked Grape Must is produced and bottled by the Bellei company in Italy. They have been producing balsamic vinegar since the 1800s, and while they have grown much in the last few generations, they still maintain a family character and caring approach.
