Wherever you go in the country you’re rarely far from a good meal thanks to the whole assortment of tapas bars and restaurants which define the culture of high streets nationwide. The beauty of Spanish food lies in the use of fresh ingredients rather than fancy sauces. Freshness and simple cooking techniques help create tasty and varied cuisine throughout this diverse nation.
The whole food culture is one of the things I miss most when I’m away from Spain so I've learned to cook many of the country's best known dishes. In this book I've included my favourite tapas recipes which most commonly appear on tapas menus in the bars of Spain. Of course perennial favourites such as Spanish tortilla, meatballs and croquetas all appear together with a selection of other tapas dishes that I consider to be amongst the most popular.
Having bought more than my fair share of tapas recipe books over the years I've been quite critical of the number of tapas recipes for dishes that I've never seen in more than 20 years of eating in Spain. This book is not 101 tapas recipes that nobody has ever heard of, it is a selection of authentic tapas recipes as prepared in the kitchens of Spain with simple cooking instruction.
