This is an authentic Calabrese style salame based on the Fiasche family recipe with considerations to guidelines set for the production of Soppressata di Calabria DOP. Using special Calabrian chilies imported exclusively for Nduja Artisans Salumeria, our Soppressata shows beautifully on a cheese board. As former chefs, we understand the importance of balancing salt, seasoning and spice to enhance the food our salumi is paired with, instead of overwhelming the palate, and compromising the experience of the guest. For that reason, our salumi complements a chef's menu, without confusing the experience with too many seasonings, or overpowering the dishes with too much heat. Salt balances with acidity to create just enough interest to encourage another bite. By taking cues from family traditions, and understanding the sensibilities of gourmet consumers, Nduja Artisans is able to offer this necessary component for an ideal southern Italian meat platter.
