Sample Recipe: FISH STEW
This is a quick, super-yummy and filling version of San Francisco’s traditional Cioppino. You can make the fish stock yourself using the recipe in our book, or you can find prepared versions in the freezer section of your supermarket. Another option would be to use 1/2 bottled clam juice and 1/2 vegetable stock.
INGREDIENTS
3 tablespoons extra-virgin olive oil , divided 1 large Onion, chopped 7 cloves Garlic, chopped ¼ teaspoon Red Pepper Flakes 2 cups Canned Diced Tomatoes with juice 5-1/2 cups Fish Stock 1 large Bay Leaf 1 tablespoon Fresh Thyme (or 1 teaspoon dried) Salt and freshly ground Black Pepper 3 pounds fresh or frozen/thawed firm white fish such as Cod, Bass, Halibut or Haddock ¼ cup chopped fresh Parsley 3 tablespoons chopped Fresh Tarragon 5-10 drops Tabasco, or to taste
