‘Dry’ processing uses no preservatives or artificial methods to preserve the quality of the scallop (as opposed to ‘wet’ harvesting that you find in some supermarkets - the glossy plumpness is from preservatives and carrying additional water weight). Dry scallops are ideal for searing and taste (almost) as good as freshly shucked on the boat.
Flash freezing uses cold temperatures to maintain freshness, preserve nutrients and protect the product from external impurities.
