Snow crab are distantly related to King Crab and are another variety of giant crab found in the icy waters of both the North Atlantic and North Pacific Oceans. Snow Crab boasts a sweet, delicate crab flavor, with meat ranging from reddish tint to pure snow white. Snow crab legs are fully cooked prior to freezing.
Our snow crab legs are wild caught and generally sourced from the icy waters surrounding Greenland. Snow crab leg clusters are removed from the body of the crab, cleaned and cooked in boiling salt water (this gives the leg shells their red color). The cooked crabs are then ice glazed and flash frozen to protect the quality of the leg meat.
A ‘cluster’ of snow crab legs is usually 4 legs (3-4) and an ‘average’ weight is 8 to 10 ounces per cluster. Snow crab leg clusters yield about 50% of the total weight in meat. To feed two people 6 ounces of crab meat each you would need a total of about 24 ounces of snow crab legs or slightly less than 2 pounds of snow crab leg clusters (about 4-5 clusters each). Snow crab leg clusters are generally available in 5-8oz, 8-10oz, and 10-12oz (or 10 oz and up) clusters.
To thaw, for best results remove from all packaging and refrigerate 8-10 hours or overnight. The saltwater glaze will melt so put in a container or wrap in a kitchen towel.
