Today, the most popular wine bottle stoppers are made of plastic and attach to a vacuum. The extra air from the open bottle is extracted, and the wine bottle stopper creates a seal that enables the wine to stay fresh for a minimum of six days, up to almost two weeks. This allows much more time for the wine to be enjoyed.
Caution about Sparkling wine:
You can't use the vacuum pump to store wine that is sparkling wine (Champagne) as all you will do is end up making it very flat or it will pop the stopper out of the bottle. You are better off storing sparkling wine using one of the spring loaded caps that is designed for sparkling wine.
Instructions:
The vacuum pump consists of a rubber stopper and a small hand-pump. The stopper is pushed into the bottle and the pump is used to pump most of the air out of the bottle. The more wine your remove from the bottle, the more you must pump to get the air out. Depending on the size of the bottle and the amount of wine left in the bottle, the number of times you must pump will vary. Pouring only one glass of wine will need only 3 pumps to create the vacuum, but if you pour 5 glasses from a 1.5L bottle may take 10-12 pumps.
