Our dried black fungus (or wood ear) mushrooms are from the Northeast region of China, which is known for having rich dark soils, dense forests, substantial temperature differences between night and day, and rivers capturing abundant snow-melting water from the surrounding mountains. The extraordinary combination of all these factors produces wood ears mushrooms that, although slightly smaller in size, are significantly "meatier", thicker and crunchier than the white-back varieties from other regions. Wood ear mushrooms are rich in dietary fiber and protein, low in calories, contains no sugar, and only negligible amounts of sodium and fat. The Chinese culture have traditionally believed that wood ear mushrooms have medicinal values, and modern research have shown Wood ear mushrooms to have anti-tumor, hypoglycemic, anticoagulant and cholesterol-lowering properties. According to livestrong.com, 1 cup of wood ear mushrooms provide more than half the minimum recommended dietary intake for dietary fiber; as much as 21% of recommended daily allowance for iron for adults over 50; and 15% to 22% of recommended daily allowance for vitamin B2.
