This French-made closed-bottom cheese mold is for pressing a variety of large, hard cheeses. It includes a follower/pressure-plate and has a closed bottom for the added pressure typically used for larger cheeses. It can be used with a variety of cheese presses or simply apply a weight to the follower. It is ideal for making 5 to 7lb (2.3kg to 3.2kg) of cheese from 5 to 7 US gallons (18.9L to 26.5L) of milk (depending on the moisture content).
